Meat & Livestock Australia will relaunch its meat journal, Chef’s Special under the new masthead Rare Medium.
The aim of Rare Medium is to bridge the gap between farm and kitchen and to support the continuing meat-education of chefs and foodservice professional throughout their careers.
The journal is available free to the Australian foodservice industry and is published on a quarterly basis by Meat & Livestock Australia on behalf of the beef, lamb & goat farmers of Australia. It has been in production for 20 years.
Each issue explores a single meat theme through a mélange of ‘farmlogues’, butchery master classes, art, photography, interviews, and, of course, innovative beef, lamb & goat recipes by Australian and international chefs.
Rare Medium enjoyed a design change in late 2010 and since then has won acclaim both internationally and in Australia with awards in both the D&AD International Design Awards (London, 2010, 2011 & 2012, 2013) and the AGDA National Biennial Awards (Brisbane, 2010).
