Summary

Meat Standards Australia (MSA) is a beef and sheepmeat eating quality program designed to take the guesswork out of buying and cooking Australian red meat. MSA involves all sectors of the supply chain from paddock to plate. A wide range of cattle and sheep management practices, processing systems, cuts, ageing periods and cooking methods have been researched to determine the impact each has on eating quality.
Also to ensure the MSA system continues to be a world leading eating quality program, continually support, development and process improvements are required. A number of key technical advisors provide support and assistance to the MSA system. These consultants are world renowned scientists that have specialist skills and knowledge in both MSA lamb and beef, meat science and yield. ​
The objectives of the technical advisors were to:Deliver support to the MSA beef and sheep meat R&D effort and the MSA grading services.Assist MLA with statistical knowledge.Assist MLA with the development and implementation of programs.Assist MLA with the preparation of scientific papers and the extension of the MSA Index.Provide technical guidance to MLA relating to eating quality and MSA.Provide technical comments on a number of project final reports.Participate in meetings and workshops with stakeholders where required.Assist MLA to respond to particular eating quality and MSA issues.
