Summary
This company managed agreement (CMA) was establshed to communicate and disseminate all of the dry ageing research that MLA has performed, to Western Australia producers and processors. This information provides industry with an alternative method to add value to existing red meat products.
Objectives
The objective of this CMA was to fund and communicate of all the dry ageing research MLA has done to-date, to Western Australia producers and processors at workshop organised by MLA.
Key findings
The workshop had representatives from all across industry - from producers and regulators, to retailers and processors. All of the attendeesl had interest in starting dry ageing within their business, as it is an emerging market in Western Australia.
Benefits to industry
Dry ageing can add up to 30% more premium to product. The research communicated within this project provides industry with an alternative method to value add products without needing to add ingredients or too much further investment.
