Sheep meat Eating Quality - Research Report

A telephone survey of participants in the producer, processor, retail and food service sectors has been carried out.  This was supplemented by face to face interviews of selected processors, retail butchers and wholesalers, to determine: 

  • Views and perceptions of product and eating quality of lamb and sheepmeat. 

  • Key management factors affecting eating quality including in their own business. 

  • Issues for eating quality research and distribution and utilisation of eating quality information.
