Baseline survey of salmonella in Australian beef to export markets
The Food Safety Inspection Service (FSIS) released a notice to test for Salmonella in addition to testing for the presence of E. coli O157 and the other 6 serogroups of interest to FSIS. The Baseline will gather microbial data from industry, the initial stage will be to survey 375g of manufactured trim for the prevalence of salmonella, and the later stage will include the swabbing of large carcases surface area before and after interventions.
There is also a developing hypothesis in the US, that Salmonella found in ground beef does not only come from faecal contamination of the external meat surface, but also from lymph nodes that are found within beef primals and trim that are used to produce ground beef.
The Australian industry needs to be able provide data to the US FSIS and customers to support its position in the market and to understand risks and direct potential risk management actions resulting from the survey.
