Sydney’s world-famous steak scene celebrated in new Rare Medium episode – Powered by Australian Beef
Sydney’s steak scene takes centre stage in a new feature episode by food service platform Rare Medium, celebrating the city’s top venues and the Australian beef behind their global acclaim.
The episode showcases the chefs, their menus, and the premium Australian beef that powers their success.
The Rare Medium episode dives into the heart of Sydney’s steak excellence, featuring in-depth conversations with chefs from Margaret, Rockpool Bar & Grill, The Grill at The International, Firedoor, and Porteno.
Each chef shares their philosophy on sourcing and preparing premium Australian beef, offering practical tips for achieving steak perfection, from selecting the right cut and mastering dry-aging techniques, to cooking with precision over open flame.
The episode is a masterclass in culinary craftsmanship, showcasing how Australian beef elevates the dining experience at every level.
Sydney was recognised earlier this year as the 2025 World’s Best Steak City; a title earned through the city’s remarkable representation on the prestigious World’s 101 Best Steak Restaurants list.
Meat & Livestock Australia (MLA) is proudly celebrating this achievement, which was awarded thanks to 11 Sydney venues being featured, including five in the top 20, positioning Sydney as the global showpiece of premium steak dining.
This achievement is underpinned by the consistent excellence of Australian beef, which is featured on the menus of at least 37 of the world’s top steak restaurants.
“This is more than a culinary accolade. It’s a celebration of the entire Australian beef supply chain,” said MLA’s Managing Director, Michael Crowley.
“Behind every world-class steak is a producer whose care, craft, and commitment to the land ensures that Australian beef remains among the best in the world.”
The list spans top steak destinations across the globe, including New York, Tokyo, London, and Buenos Aires. Notably, venues such as Hawksmoor (UK) and Wolfgang’s Steakhouse (USA) also feature Australian beef on their menus.
“These chefs aren’t just serving great steak, they’re setting benchmarks for the world,” said MLA’s Corporate Chef Sam Burke.
“It’s a privilege to see Australian beef at the heart of these kitchens, and there’s so much our food sector can learn from their craft and innovation.”
With 17 Australian venues on the global list and widespread use of Australian beef internationally, the impact of our producers is felt far beyond our borders.
“Our producers are the backbone of this success,” Mr Crowley said.
“Their dedication to excellence allows chefs to create unforgettable dining experiences. This accolade is a testament to their hard work and the strength of our supply chain.”
