Summary

​These guidelines have been developed for retailers of meat and meat products. The guide provides a risk rating for your operation and suggests ways you can reduce the risk to your customers. It also supplies scientific backing for your Food Safety Plan and provides background information to support training programs for owners of butcher shops, staff and apprentice butchers.
