Summary

​The aim of this project was to use leading edge science in meat protein isolate extraction for red meat derivates as an ingredient in snack (or other) food products. This is aligned toinsight trends for improved convenience, health (from "naturally healthy" ingredients) and indulgent tastes thereby delivering new high value offerings for the Australian Red meatindustry. Using Xinova's open innovation and technology review process, insights and innovative solutions were developed.
