This project reviews a number of (food industry) drying technologies and potential applications to drive red meat innovation. MLA Donor Company’s 2Morrow’s Foods program is currently investigating with commercial partners platforms such as freeze drying, rapid microwave drying, and milling and extrusion technologies to produce value added red meat products.
