Summary

​The retail display life for vacuum-packed, chilled beef and lamb is restricted in some countries because of food safety concerns, due to the perceived risk of botulism.  A risk assessment of botulinum risks under these conditions is being undertaken (P.PSH.1033) and it was intended to collect data on Australian beef and lamb to contribute to this risk assessment, however, a satisfactory survey design could not be developed.
