Summary
MLA conducted a pilot of nutrient testing on 5 cuts to determine if variations exist between 2001 Australian Food Composition data, grass-fed data and grain-finished data. While results showed minimal variance in the nutrient values of lean muscle, distinct differences were found in the separable fat values.
Consequently, no immediate reanalysis of the existing lean data is required, but untrimmed cuts must be re-measured to establish accurate fat values.
Objectives
- Compare 5 cuts to find nutritional differences between a 2001 benchmark, grass-fed, and grain-finished meat.
- Identify if variations occur in lean muscle or separable fat.
- Determine if lean data needs immediate reanalysis or if the focus should shift toward fat measurement.

This project provides consistent, evidence-based nutrient values for red meat.
Future research
A new project will be established to conduct further analysis and develop nutrition guidelines and claims for the retail sector.
