Summary

The Japan-Australia Beef Exchange program is to support the exchange of young professionals between Japan and Australia so as to build bi-lateral partnerships between future industry leaders.

Objectives

- Initiate MSA beef R&D with Japanese colleagues.
- To compare the consumer responses of Japanese and Australian consumers to beef.
- Work with Australian exporters and Japanese importers to underpin marketing.
- Work with Japanese beef industry to design beef sensory experiments to understand the response of Japanese consumers to leaner beef cuts and alternative dry aging methodologies.
- Further the understanding of the association between muscle type, human nutritional value (Fe, Zn) and eating quality in beef and lamb.
- Improve industry knowledge and linkage between scientists servicing the Australian and Japanese beef industries.
- Establish international link between young staff members and expose them to the beef industry value chain.
