Summary

The purpose of this project is to deliver effective end user training services to MSA stakeholders. With significant adoption of MSA in Australia, there is opportunity to facilitate the extraction of greater value from the program. In particular working with brandowners and large end user accounts to not only underpin their business with MSA but embrace value adding and carcase utilisation opportunities.

Objectives

  • Plan and deliver MSA training services to end users for beef and sheepmeat in alignment with the MSA strategy and implementation plans. This includes wholesalers, retailers and food service outlets.
  • Collaborate with the MSA team to identify end user education opportunities to increase awareness and utilisation of MSA •Identify and work with large end user accounts to adopt MSA to underpin their business and increase red meat acquisitions in their business.
  • Identify and work with large end user accounts to extend the value of MSA in a business through value-adding exercises.
  • Facilitate the MSA licensing program for end users as required •Implement and deliver the training and licensing program for Independent Boning Rooms

Benefits to industry

Education of large end user accounts and brandowners supports adoption of full carcase utilisation in industry, drives eating quality principles along the supply chain and keeps red meat on the menu in an innovative way.

Future research

This consultant will continue to be contracted to continue to deliver eating quality education to industry and end users to facilitate keeping red meat on the menu.
