Summary

The project was established to deliver up to four MSA Meat Science Courses between 2022–24. The contract aimed to build red meat industry capability in meat science, eating quality, and MSA supply chain factors.
However, the project was terminated early because responsibility for delivering the MSA Meat Science Course transitioned from MLA to AUS‑Meat, making the contracted delivery arrangement redundant.

Objectives

Deliver five day Meat Science courses using lectures, practical activities, workshops and assessments. 
Ensure effective transfer of scientific principles of eating quality to industry stakeholders. 
Conduct assessments and return results to MLA within three weeks of course completion. 
Incorporate new MSA and eating quality research outcomes into course content as they emerged.

Key findings

The MSA Meat Science course remains a critical training requirement for MSA‑licensed processors.

Strengthening industry capability in meat science, carcase attributes, palatability factors and MSA compliance.
Improving processor performance, reducing the risk of audit non‑conformance due to untrained staff.

Future research

The transition of training responsibility to AUS‑Meat means that no future contracting is required by MLA.
