Summary
This project considered the impact on eating quality of allowing young sheep with partially erupted permanent incisor teeth to be classified as lamb. Eating quality of meat from sheep at various stages of eruption (milk, partially erupted or fully erupted teeth),were evaluated using objectives and sensory measures. The study was conducted with three flocks representing the three genotypes that contribute to the prime lamb industry in Australia; Merino, first cross and second cross.
