Check out high pressure packaging

In the last edition of Goats on the Move, we profiled a new processing technology called high pressure packaging (HPP).

MLA has recently developed a short video which demonstrates this technology and the ways it can be used to add value to secondary cuts of goatmeat, beef and lamb.

The technique involves applying very high hydraulic pressure to food that has been packed and immersed in liquid, killing pathogens and extending shelf life while reducing or eliminating the need for preservatives.

HPP maintains the colour, flavour and ‘fresh-like’ characteristics of the meat and shows promise to improve the eating quality of goatmeat, through tenderisation.
