Summary

This project funded the research and development necessary to take the microwave beef product from a proof of concept to a product available on the retail shelf.
Microwave roast beef was an innovative new beef product that would be ready to cook and guarantee a juicy, soft and tender textured meat that can be cooked in the microwave or oven. The product could be presented in microwave safe packaging for microwave cooking. The product specification was:
Raw beef with flavour butter knob
Needs to be cooked to an internal temperature of 68 degrees C
Presented in a microwave safe self venting bag for ease of handling and cooking by consumer
Produces a rich gravy naturally during the cooking process but must be rested (up to 20 minutes) for the sauce to gain correct viscosity. The cooking time is approximately 14 minutes on med heat​
Outcomes
The product was offered on an exclusive basis (for a limited time) to Cargill, but was not taken up commercially.
