Summary

P.PSH.1435 Long shelf-life of cooked beef and lamb products stored at ambient temperatures was a proof of concept project for sous vide beef and lamb steak stored at ambient temperatures lasting more than two years. It was planned to include three x 12 consumer testings from Australia, Dubai and Indonesia for a qualitative consumer perception research. The termination of this project is based on financial constraints to obtain insurance. No progression beyond milestone one was delivered.

Objectives

The objective was for the production of samples to test consumer acceptance and the claims via micro and organoleptic testing (consumer surveys) in three markets (Australia, Dubai and Indonesia), including two markets that have historically experienced challenges in maintaining chilled supply chain consistency.​

Key findings

The work undertaken (MS1) did not proceed due to financial constraints to provide the required insurance coverage prior to consumer testing.

Benefits to industry

Reduction in supply chain costs. This benefit will not reach the industry as the project was terminated prior to completion.

MLA action

Due diligence is required to be performed on start-up enterprises to ensure funding is available to be allocated to insurance requirements.

Future research

There is potential for possible novel opportunities to be explored in the ambient supply chain.
